LEMON DRESSING

FROM EMMA DUGGAN AT THE WHITECHAPEL GALLERY DINING ROOM

Perfect on a salad involving cheese or to accompany fish.

Ingredients

1 teaspoon Dijon mustard

Juice of 1 lemon

250 ml Mrs Middleton’s cold pressed rapeseed oil

Equipment

small bowl and whisk

Method

1 Whisk up the mustard and lemon juice to combine

2 Very slowly drizzle Mrs Middleton’s oil into the bowl whilst whisking.

3 Season with salt and pepper.

4 The dressing should come together and be smooth in appearance, if it splits don’t worry just give it a good stir or shake before using.
