2 tablespoons Mrs. Middleton’s rapeseed oil
1 tablespoon milk
3 over-ripe bananas
Handful chopped nuts (optional)
6 ½ oz self-raising flour
3 oz sugar
½ teaspoon bicarbonate of soda
Pinch of salt
Preheat oven to 200C.
Mix together the oil, milk, mashed bananas, egg & nuts (if using).
Add remaining ingredients, mix well & divide between approximately 12 paper cases, depending on the size of muffin required.
Cook for 15 minutes, checking after 10. They are ready when a skewer comes out clean.
